A Thai cooking class is consistently rated one of the top activities in Thailand, and for good reason. Most half-day classes (900-1,500 THB) start with a visit to a local market where you learn to identify Thai ingredients — galangal vs ginger, kaffir lime leaves, shrimp paste, palm sugar. Then you cook 3-5 dishes in an outdoor kitchen, eat everything you've made, and receive a recipe booklet. Chiang Mai has the highest concentration of cooking schools (Mama Noi, Thai Farm Cooking, Asia Scenic). Bangkok options include Silom Thai Cooking School and Baipai. Many schools have vegetarian-friendly menus. Book a day ahead in peak season.
